I recently built a Boomerang with the TBLE-02S ESC, and run on NiMh batteries.
Now I'm looking in getting another motor for this setup.
Brushed or brushless.
As it is a boomerang, the pinion size is max 17.

What would be the best choice?

I like the Hobbywing Justock motor. At 17.5 turns it will work with your TBLE-02s and it is sensored and very smooth. I have a couple of them.

And do you advise a 17.5t because of the limit in pinion choice (13t-17t) or are f.e. 11.5t motors too powerfull for the boomerang?

It's not that 11.5T is too powerful for the Boomerang, but it is too powerful for the TBLE-02s. You'll just overheat and shut down constantly with an off road model. 17.5T is plenty fast off road (in my opinion).
